Theres nothing I love more than a hot casserole for dinner on a cold day, and this one is one of my favorites. It’s a real hearty meal that will warm your soul, and its covered in melted cheese, need I say anymore?!
Ingredients (serves 4)
- 3 breasts chicken
- 1 cup chopped mushrooms
- 1/2 cup of chopped peppers
- 1/4 onion chopped
- 1.5 cups grated cheddar cheese
- 4-5 servings of thick egg noodles
- 1 cup milk
- 1 can condensed milk
- 1 tbsp butter
It’s so easy to make this. Heat oven to 420° F. Chop all your ingredients and heat your pot with the butter. Add the chicken and fry until white, then add the other veg. While the chicken is frying, boil a saucepan of water, season with a pinch of salt. Add the noodles once the water is beginning to boil.
Boil the noodles until soft but not quite cooked yet.Mix your can of condensed chicken soup with the milk. Stir until it forms a thick soupy liquid. Grate your cheese. The amount of cheese you use is really up to you, I love cheese so the more, the better in my opinion.
Once the chicken and vegetables are cooked, add the chicken soup/milk mix and stir. Drain the noodles and add them to pot with your chicken and vegetables and stir everything to mix it properly. Then transfer everything to a casserole dish and sprinkle the cheese over the top. Cover and place in oven for 25 minutes. Cook uncovered for last 10 minutes.
