I first got this recipe from Joe Wicks, The Body Coach, of you don’t follow him, you should! And I’ve changed it up a little by adding mushrooms (mushrooms make everything better), some Cajun spice and I also add shredded cheese on top, because why not?!
Ingredients (serves 4)
- 2 breasts of chicken
- 2 cups of shrimp (I use frozen shrimp)
- 1 cup of chopped spring onions
- 1 cup of chopped mushrooms
- 1 cup of chopped peppers
- 1 cup rice
- 1 tsp Cajun spice
- 1 heaped tbsp of turmeric
- 1 stock cube
Place chicken in pot and cook until white, then the shrimp and cook. Next add the onions, mushrooms and peppers. Add Cajun spice according to taste.
Bring the rice to boiling point but only let boil for 1 minute.
Mix stock cube (you can use chicken or vegetable) with 250 ml boiling water, add the heaped tbsp of turmeric so that the mixture turns a nice yellow colour.
Drain the rice and add it to the chicken and vegetables, then add the stock & turmeric mixture. Mix well and turn up the heat for a few minutes, continuing to stir.
Lower the heat and continue to stir. In the meantime grate 1 cup of cheese. Leave on heat until the excess liquid is gone but dish is still moist.
Serve and add grated cheese on top.
Tip: Depending on my mood, I sometimes add spicy chorizo which really adds a delicious flavour to this dish!
